The husband and wife team who now manage and operate Triple N Oyster Farm are both biology professors at Louisiana State University: aquariums defined their professional lives. Then - in 2016 - the couple heard about water leases being made available for an alternative form of raising oysters - an approach tried elsewhere but new to Louisiana. Allocated a 300-by-300-foot plots of water available to such oyster operations, the firm's specially bred oysters start their lives on the farm as 2 mm seed oysters. Raised in floating bags designed to give the oysters optimal oxygen and algal concentrations to reach market size within 6 months. The constant rocking action of the waves generates a clean oyster with a deep cup enabling oysters that remain fat all year round.
